Bikini Recipe
Serves 10 guests
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Premix (yields 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Cordial: Combine the listed items inside a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Next, take off the stove and leave to cool down entirely. Decant to a sealable bottle, close it and store in the fridge, where it will keep for about one month.
For the Batch Mix: Mix every spirits and syrup in a big jug, let it rest for 60 minutes, then strain preferably using cheesecloth, to ensure it's perfectly clear.
When ready to serve: Measure 85ml from the premix into a stirring glass packed with ice, gently stirring lightly for about 60 seconds to cool it down. Strain into a chilled martini glass or equivalent, garnish with a few cranberries and finish with a brief mist of mandarin oil over the top.
